This delightful recipe for raw macadamia cookies has been shared with us by Kristy from Slim Birdy. They look mouth watering and I can't wait to try them for myself!
Slim Birdy and book Lite as a Feather is the creation of Kristy Zenk, a writer and marketing professional who battled with her weight most of her life. After years of yo-yo dieting and binge eating, her life changed forever when she decided enough was enough. No more listening to everyone else’s advice, instead, tuning into what her body was telling her. Kristy's philosophy is based in the healthy to alternative eating camp and her message is about finding your happy body in the most feel-goo way.
1 cup raw macadamia nuts
1 Tbsp. organic maple syrup
1 tsp. vanilla essence
Whizz all ingredients in a food processor until it all sticks together. Take teaspoons full and place in small cup cake papers, press to flatten a little. Have oven barely on at 30°C (86°F) and dehydrate for 24 hours (you can bake them on say 100°C (212°F) for 1 hour if you must ‘cook’ them but they don’t turn out the same light just dried crunchy texture or have the same taste).
